Thanks to everyone who participated in the Dessert Challenge of our Spring Break Paleo Survival Challenge. The coaching staff was honestly overwhelmed by the number of desserts that were entered into the contest. We were snacking on the entries for about 5 days straight, so a HUGE thank you to everyone who took the time to prepare a dessert for judging. We will be posting all the recipes for the desserts entered tomorrow so stay tuned for some delicious ideas!!!
Each coach was asked to vote for their two favorite desserts and the top two vote getters were:

Paleo Brownie Cookie
Ingredients
For the brownie layer:
15 dried medjool dates, pitted
1/4 cup coconut oil, melted
2 tablespoons coconut flour
3 eggs, whisked
1/4 cup unsweetened cocoa powder
2 tablespoons raw honey
1 teaspoon vanilla extract
1/4 tsp. baking soda
1/4 tsp. baking powder
pinch of salt
For the cookie layer:
4 large eggs
1/4 cup honey, raw
1/4 cup coconut butter
1/4 cup coconut oil, warmed
1/2 tsp vanilla extract
1/2 tsp almond extract
1/2 cup coconut flour, sifted
1 cup almond flour
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 cup dark chocolate chips
